It’s obvious to recognize Tie Guan Yin Oolong with good quality. Twisted and rolled-ball shape with jade-like gloss, dark yellowish green dry leaf and clear floral hint. After brewing, the tea infusion is of pale-yellow green color with a smooth body and sweet finish. It is beautifully floral and fragrant with lingering sweet aftertaste. 

To produce premium Tie Guan Yin Oolong is definitely not easy. The processing is complex and requires expertise. Even if the tea leaf is of high raw quality, but without the right processing steps, its true character will not be shown. This is why the method of processing Tie Guan Yin Oolong was kept in a secret and different tea farmers have their own tips. 

The whole process usually involves 8 major steps, including plucking tea leaves, sun withering, cooling down, tossing, withering which includes some oxidation, fixation, rolling and drying. (采青-晒青-晾青-摇青-萎凋-杀青-揉捻-干燥), and each step needs gingerly care to ensure the smooth transition to the nest step and the overall quality.
