We are excited to present a new matcha in our tea collection. Introducing our own branded matcha from Yame City (八女市) in Kyushu (九州) Japan. Located in the mountainous areas of southern Fukuoka Prefecture, where the Yabe River flows through, the climate is suitable to grow tea. With high temperatures during the day and dropping drastically in the night, along with the fog and mist in the mornings of this region, the environment help shields the harsh sunlight making the tea leaves tender and rich in flavour as well as producing compounds such as theanine, glumatic acid, and arginine. The resulting flavour of the tea is more full in umami.
The name Shin-rei (森霊) is attributed to this single cultivar Okumidori matcha. The flavour of this matcha is green like a gentle calm forest. Not the usual mild sweet body, this tea is a bit fuller in umami and forest-like green flavour.
