Exploring the unique character of Longjing, Biluochun & Taiping Houkui
A 90-minute guided tea tasting at ICHA TEA
Every tea has its own character—but the way we brew it can reveal an entirely different side.
In this intimate tasting, we will explore three iconic Chinese green teas through three distinct brewing methods. By changing the order of tea and water, or the temperature of the water, we will experience how brewing transforms each tea’s aroma, flavour, texture, sweetness, and overall expression.

Bottom-In Brewing · Tea Leaves First
We begin with Longjing by placing the leaves into the cup before adding water.
As the leaves slowly unfurl, the tea reveals a clear, smooth liquor with delicate roasted and chestnut-like notes. This gentle brewing method highlights Longjing’s calm, refined character and allows us to observe how the leaves gradually open in the water.

Top-In Brewing · Water First
For Biluochun, we add water before the tea leaves.
Watch the fine, curled leaves slowly sink through the water as their floral and fruity fragrance rises and expands. Compared with the bottom-in method, this approach creates a more dynamic visual experience and brings out Biluochun’s lively aroma and delicate sweetness.
· Taiping Houkui · Fresh & Expressive
Hot & Cold Brewing · Temperature Changes Everything
Taiping Houkui offers a completely different brewing experience with its long, distinctive leaves.
We will taste the same tea brewed with both hot and cold water, discovering how temperature changes its aroma, sweetness, body, and finish. Hot brewing brings out its fragrance and fuller texture, while cold brewing reveals a softer, sweeter, and more refreshing expression.

This tasting is not only about comparing three teas. It is also about experiencing how different brewing methods can transform the tea in your cup:

The same leaves can open in different ways depending on how they meet the water. Through these three methods, we will explore how brewing influences the tea’s appearance, aroma, flavour, texture, sweetness, and character.
